Summertime Recipes: Moon Cake

We’re doing a whole series of recipes from Mummy Deals readers that are perfect for summer gatherings: they’re easy breezy and require limited work! Thanks Amy for this week’s.

It’s called MOON CAKE and is called that because of the way the bottom ends up when it is cooked. It’s basically a flat eclair and completely DIVINE!

Ingredients

  • 1 stick butter
  • 1 cup boiling water
  • 1 cup flour
  • 1/4 tsp salt
  • 4 eggs
  • 6oz vanilla pudding
  • 8oz cream cheese
  • Cool whip
  • Chocolate syrup

Directions
*In a saucepan melt 1 stick of butter in 1 c. boiling water. Add 1 c. flour & 1/4 tsp salt. Cook, stirring contantly until mixture is smooth and forms a soft ball. Cool slightly.
*Add 4 eggs, one at a time. Beat until smooth. Flatten mixture on a cookie sheet and back 20 min. at 400. Cool.
*Top with two 3 oz. packages Vanilla Pudding, mixed according to pkg. direcetions and combine with 8 oz. cream cheese. Spread top with Cool Whip. Drizzle with Chocolate syrup. Top with slivered or slice almonds.
