Stuffed Zucchini

My friend Gina made this a-mazing recipe with zucchini recently and as the zucchini is a great fall veggie, I thought you’d like her recipe. Thanks Gina!

1# ground turkey or beef
1/4 cup rice
8oz can tomato sauce
1 tsp each — oregano, basil, salt, Lawry’s
1/4 tsp each — pepper, Italian seasoning
Shredded mozzarella cheese

  1. Cut zucchini lengthwise, microwave with wax paper (cut side up) for 6-8 minutes. Let cool and scoop out the pulp.
  2. Brown 1 lb hamburger (I do ground turkey) with 1 small onion.
  3. Mix in 1/4 cup rice, 1 8 oz. can of tomato sauce (or chopped up fresh tomato), some of the chopped up zucchini pulp (optional)
  4. 1 tsp each — oregano, basil, salt, Lawry’s
  5. 1/4 tsp each — pepper, Italian seasoning
  6. Stuff the zucchini.
  7. Bake at 350 for 1/2 hour. For the last 10 minutes, sprinkle with mozzarella.


  1. I absolutely love this stuff. I thought that I invented this recipe. Lol. One year, my zuchini was let to grow and I had these huge zuchini. I didn’t want them to go to waste, so I thought that I would use the same recipe as my stuffed peppers or cabbage. Oh, and try to use spanish rice with extra tomatoes added so that you have a tomatoe sauce surrounding it while it is baking. The top it off with American cheese slices. Not processed – it is not as good. Boy am I hungry, now. Lol.
