Slow Cooker Tamale Pie

I made Slow Cooker Tamale Pie recently and it was an easy and cheap meal that was good for on the go! The spices can be added or subtracted depending on taste and it’s definitely one of those comfort food meals that’s easy to throw together in a pinch. In fact I had all the ingredients bar one!

 

Slow Cooker Mondays

Ingredients

  • 3/4 cup of cornmeal
  • 1 1/2 cups of milk
  • 1 egg, beaten
  • 1 lb ground beef or turkey already browned and drained
  • 1 envelope chili seasoning mix or make your own
  • 16oz can tomatoes. I used ones with a little chili and lime
  • 16oz can of corn, drained
  • 1 cup of grated cheese
  • Sour cream: optional

Instructions

  1. Combine eggs, milk and cornmeal.
  2. Stir in meat, seasoning, and vegetables and stir well.
  3. Pour into your slow cooker.
  4. Cover.
  5. Cook on high 1 hour and then on low for 3 hours
  6. Serve with cheese or sour cream
