Slow Cooker Stuffed Peppers

If your family enjoys stuffed peppers then here’s an easy way to make them – slow cooker stuffed peppers. My inlaws eat a lot of these and have a favorite recipe for them so feel free to tweak your usual recipe and then add them to your handy slow cooker to cook them for you!

Makes 6 servings.

6 large peppers. I used a mixture of green and yellow as it was what I had!
1 lb. ground turkey, browned
2 T minced onions
2 t. garlic powder
2 cups of cooked brown rice
1 (15 oz.) can tomato sauce
3/4 cup shredded Mozzarella cheese

  1. Cut the top of the peppers and remove the seeds.
  2. Mix the other ingredients together except the cheese.
  3. Stuff the peppers with the mix and place in your slow cooker.
  4. Add 1 cup of water.
  5. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.
  6. Sprinkle with cheese during last 30 minutes of cooking time.
