Slow Cooker Taco Soup

This Slow Cooker Taco Soup came from a friend of mine and is an easy one to make and even freeze ahead. Simply add all the ingredients to a freezer bag and label. Defrost for a couple of hours before adding to your crock pot.

When Fall is here your crock pot is probably like mine: permanently ensconsed on my kitchen counter. Most days I dream of something to warm our bellies and when Hubs comes home I’m able to just dish up without much preparation.

My friend Julie sent me this recipe for Slow Cooker Taco Soup which I love because it’s simple: Just empty 4 cans plus a couple of other things and mix in your slow cooker. Yup, nothing is simpler. Plus it’s hearty enough for your brood, kid-friendly (she tried it on picky eaters) and is easy on the wallet too. Enjoy!

Slow Cooker Mondays: Taco Soup

  • 1lb hamburger (cooked and drained)
  • Medium onion
  • 1 can corn - don't drain
  • 1 can kidney beans- don't drain
  • 3 x 8oz cans of tomato sauce
  • 1 can diced tomatoes
  • 1 package taco seasoning.

  1. Add all ingredients into the crock pot and cook on low for 4-6 hours.
  2. Serve with shredded cheddar cheese and tortilla chips
  3. TO change it up: Add a can of black beans & ranch dressing packet for a twist to it
