Slow Cooker Mondays: Skinny Chicken Chili

My friend Janet sent me this recipe for skinny chicken chili that you make in your crock pot. Can’t wait to try it! It’s also a great recipe to freeze. Simply add all the ingredients to a freezer bag and label. Get it out the night before and place in your crock pot the next day. Easy peasy!

Slow Cooker Skinny Chicken Chili


  • 3 boneless skinless chicken breasts
  • 1 can kidney beans
  • 1 can black beans
  • 1 can corn
  • 1 28 oz can diced tomatoes
  • 1 14 oz can tomato sauce
  • 1 packet taco seasoning
  • 1 tbsp chili powder


  1. Put in crock pot and cook on low for 6 hours.
  2. Serve with some rice and a little shredded cheese.
  3. Enjoy! 🙂

It isn’t as healthy but my family sure does love the Slow Cooker Cheesy Chicken Balls recipe.
