Slow Cooker Mondays: Low Carb Chicken and Green Beans

My friend Rebecca has been eating the Paleo way long before the Paleo diet was so famous and she loves creating new low-carb recipes. I was at her house last week and she served me this. I always feel like low-carb recipes make me hungry still but not only did this fill my tummy but it sure tasted good too. Thanks Becs!

Low Carb Chicken and Green Beans Crock Pot Recipe

Ingredients

  • 1 1/2 pounds of boneless skinless chicken breasts or tenderloins.
  • 16oz frozen green beans
  • 2 packets of onion soup mix
  • 1 can of mushrooms or 8oz fresh
  • 1 1/2 cups of water
  • 8oz onion and chive cream cheese or plain.

Instructions

  1. Slice the chicken into strips.
  2. Place in the crock pot and top with the other ingredients.
  3. Cook on low for 4 hours.
  4. Remove the lid and add the cream cheese.
  5. Cook for a further 15 minutes.
  6. Serve alone.
