Slow Cooker Mondays: Chris’ Pork Chops

Crock Pot Pork Chops

Ingredients

  • 4 pork chops
  • HERB RUB:
  • 1/4 cup fresh rosemary leaves
  • 2 tablespoons dried oregano
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ROSEMARY SAUCE:
  • 3 TBS butter
  • 2 TBS flour
  • 1 teaspoon olive oil
  • 2 tablespoons chopped shallots (about 2 large)
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 1/2 cup chicken stock
  • 2 cups heavy cream or half & half
  • 1/2 teaspoon ground dried rosemary
  • 1/4 teaspoon ground dried sage
  • 2-3 tablespoons white Roux

Instructions

  1. Mix the herb rub together and spread over the pork chops. Sear the pork chops in a skillet for 5 minutes turning once.
  2. Make the Roux: melt 3 TBS butter in a small saucepan. Add 2 tablespoons of flour over medium heat until it mixes well. Whisk with a fork, then remove from heat.
  3. For the cream sauce: saute shallot and garlic in the olive oil. Add chicken stock and reduce by 1/2 over medium heat. Add the cream, ground rosemary and sage. Let simmer and thicken after you add the Roux.
  4. Place the pork chops in the crockpot and then pour the sauce over the top. Cook in crock pot 5 hours on low, or 2.30 hours on high.

    • I have not tried it with chicken Tori but I don’t see why not. I often switch the two in recipes. I would love to hear it turns out if you do try this recipe with chicken!

  2. I’m a new stay at home dad, and can’t say that I’m the sharpest tool in the shed, so when you say mix the soup, do you mean to add water as if you were preparing it by the instructions?

    That is a heckuva’ lot of work to do before putting it in a slow cooker for 4 or 2.5 hours. I use my slow cooker so I can throw it all in and walk a way to go to work, clean house, get shopping done, etc. Any of those things combined uses more than 4 hours – and even with a timer on my slow cooker to start 4 hours before I came home I don’t think I would be comfortable leaving browned/but raw pork on the counter throughout the day.
    I would think this would be just as easy to keep in the pan on the stove and let it simmer until it’s done. I am sure it would be just as delicious as it is a gorgeous recipe.

    • I hear what you’re saying! Sometimes though I need to add stuff into the crockpot and leave the house. For that reason I like recipes like this as I wouldn’t turn my oven on. :)
