Recently with the hot weather in Chicago I decided to make Slow Cooker Enchiladas. It’s not a time for stew and comfort food but who wants to turn on the oven in this heat? Tuesdays are Taco Tuesdays around here which means Mexican themed dinners thus the Slow Cooker Enchiladas.

I love adding black beans when I can and sttttttttttttretching the meat and ya know what? My boys don’t complain and Tim really enjoyed these. Although I was disappointed that after spraying my crock pot well it still burnt a little, he was happy as he loves burnt cheese!

I used my Homemade Taco Seasoning http://mummydeals.org/homemade-taco-seasoning/ mix to make this, wheat tortillas, light cheese and no sour cream to make them a little healthier. I also added tons of veggies to mine. Enjoy!

Slow Cooker Enchiladas With Pork and Black Beans

Ingredients

  • 1.5 pounds of taco meat. I used pork
  • 1 can of black beans
  • Taco seasoning or my homemade recipe
  • 1 can of enchilada sauce
  • 1 cup of light cheese
  • 8 tortilla shells
  • Toppings - red onion, tomatoes, lettuce, avocado

Instructions

  1. Prepare your crock pot by spraying butter spray in the bottom and all around to avoid burning.
  2. Brown your pork meat and add the taco seasoning part way through and stir well.
  3. Add the black beans and cook for a couple of minutes.
  4. Warm the taco shells by placing in the microwave for 20 seconds so they're flexible.
  5. Coat one in enchilada sauce and then Add a bit of the pork and bean mixture.
  6. Roll and place seam down in your slow cooker.
  7. Rinse and repeat until all the shells are done.
  8. Cover with the cheese.
  9. Cook on low for 4-5 hours or high for 3.
