Every Tuesday night is Taco Tuesday around here and although I don’t always serve tacos I do serve some kind of Mexican food. I love it because all 3 of my guys love Mexican food and gobble it up. What I also love though is how easy it makes meal planning. When I do my meal plan for the week I automatically know what Tuesday is and it feels like a “freebie” day as I always have the ingredients for tacos on hand in my freezer including meat, cheese and tortillas so that in a pinch we can serve a great meal.
Last week we got to try the Old El Paso Taco and Fajita Tortillas. Typically I wouldn’t buy the dinner kits as I have everything separately so I was interested to see what you got.
I really enjoyed the convenience of having everything in one box and being able to create a whole meal out of it. Besides just the tacos I made some refried beans and chopped up a bunch of lettuce, cilantro, tomatoes and onions as toppings. We love fresh summer veggies and I hate my tacos without cilantro. I can’t wait for our garden to bring lots of these veggies!
