Each week my frugal mother-in-law shares a recipe with us. She’s an incredible cook and has some great recipes! This week she’s getting ready for Thanksgiving and thought she’d share some favourite veggie dishes for the day.

Broccoli-Cheese Casserole

  • One 16 oz. bag broccoli (or California blend vegetables) (steam this and drain well; or microwave but don’t add water).
  • ¾ sleeve of Ritz crackers (put into a baggie and smash; put into a bowl and mix with
  • 1 melted stick of margarine – set aside).
  • 8 oz. Velveeta cheese + 1 stick of margarine, melted together

Mix broccoli with the cheese mixture and pour into an 8×8 ungreased pan.
Top with cracker mixture.
Bake 350 degrees for 20-30 minutes until lightly browned.

Sweet Potato Crunch – 6 servings

  • 3 cups mashed sweet potatoes
  • 1/3 cup margarine, melted
  • 1 tsp. vanilla

Topping:

  • 1 cup brown sugar
  • 1/3 cup margarine, melted
  • 1 cup coconut
  • 1/3 cup flour
  • 1 cup pecans, chopped

Preheat oven to 350 degrees.
Grease a 1 ½ qt. shallow casserole.
Combine potatoes, vanilla and margarine; place in casserole.
Combine topping ingredients, sprinkle over potato mixture.
Baked covered 20 mins. and uncovered 15 mins.
