How To Freeze Cookies

I love having homemade cookies to serve during the holidays but sometimes there just doesn’t seem like enough time which is why I like to freeze cookie dough and freeze baked goods in general. If you’re wondering “Can you freeze cookies” then this post will explain it. There’s a list of homemade cookies including easy sugar cookies and other cookies from scratch. Take a day sometime in the fall to make cookies ahead of time and you’ll have plenty on hand for parties and get togethers!

How to Freeze Brownies and a Recipe for Andes Mint Brownies.

When I thought about freezing brownies I thought to myself, “I always make them from a mix which is really quick and I really don’t need to freeze them ahead of time.” But then I realized. We’re not talking just brownies. We’re talking the ooey-gooey, “melt-in-your-mouth” and really impress your guests kind like my friend Kerry’s Caramel ones (I’ll beg her for the recipe!) or these Andes Mint Brownies my friend Jen makes.

The problem with Andes Mint Brownies (besides the fact that I can eat a whole pan) is that it’s three steps. Not three difficult steps but three nonetheless and to get a step done ahead of time I made brownies and them froze them. Here’s the brownie recipe.

How To Freeze Brownies

Ingredients

    Brownie!
  • I'm a simple cook and love a good box mix which you'll need eggs and oil for.
  • Mint Layer!
  • 4 Tbsp. butter, softened
  • 2 cups powdered sugar
  • 3 Tbsp. half and half of cream
  • 1/2 tsp. peppermint extract
  • Green food coloring
  • Chocolate Topping!
  • 6 oz. chocolate, chopped
  • 2 Tbsp. butter
  • Beat butter, sugar, half and half and peppermint extract together until smooth. Add green food coloring if desired, tinting the mint layer to desired color. Spread the mint frosting over cooled brownies. Refrigerate until firm, at least 1 hour.
  • Heat chocolate and butter in a small saucepan over very low heat, stirring until just melted. Remove from heat. Let cool 1-2 minutes. Spread over mint layer. Refrigerate immediately.

Instructions

  1. Make the brownies as per the box mix.
  2. Once cooled cut each into pieces and place on a cookie sheet to flash freeze.
  3. Place in the freezer for 2 hours and then pull out and place in a ziploc bag and label ready for the day you need them
  4. On cooking day gather your mint layer and chocolate layer ingredients.
  5. Beat butter, sugar, half and half and peppermint extract together until smooth.
  6. Use the green food coloring to tint the mix to a pretty green,
  7. Spread the mint frosting over the brownies and then place in fridge for 1 hour until firm.
  8. In the meantime heat the chocolate and butter until melted.
  9. Remove the brownies and spread the mix over and then let cool in the fridge before serving.

Chocolate Chip Cream Cheese Ball.

This my friends is the stuff legends are made of. I’m not kidding.
I got this recipe years ago and every time I show up with it it gets gobbled down which is good because I can eat a whole thing alone. {Sad I know!}

 

Chocolate Chip Cheese Ball

10 minutes

Total Time: 10 minutes

Serving Size: 1 large balls or 2 small

This recipe for a chocolate chip cheese ball is perfect to divide into 2. Keep one in the freezer for busy times and serve the other one.

Ingredients

  • 8 oz cream Cheese
  • 1/2 C butter
  • 3/4 C powdered sugar
  • 2 TBS brown sugar
  • 1/4 tsp vanilla
  • 3/4 C mini choc chips
  • Oreos
  • Saran wrap

Instructions

  1. Blend the cream cheese and butter
  2. Add the sugars and vanilla.
  3. Stir in the chocolate chips.
  4. Shape into a ball and then wrap in plastic wrap.
  5. Make into a pretty ball and then place in the fridge for 1 hour to harden a little.
  6. Serve with small wafers, animal crackers or teddy grahams.

NOTE: This is perfect for freezing.  Simply place the ball in the freezer and remove 1 hour before you need it.  It’s also great year-round and I always have one on hand.  At Valentine’s I had red coloring and shape to a heart, at Christmas I’ve added green coloring and shaped to a wreath!

Mexican Chocolate Chips Balls.

I had a baby and my friend brought me these to the hospital so that when I had another I actually requested them! These are really simple to make and great for a cookie swap as it makes a big batch.

Yield: 46 cookies

Mexican Chocolate Chip Balls

Mexican Chocolate Chip Balls are a great recipe for cookie swaps as it makes a big batch. These cookies are also easy to freeze and taste great even after a month in the freezer so you can prepare them ahead of the holidays.

Ingredients

  • 3 sticks of bitter - very soft
  • 3/4 C powdered sugar
  • 1 TBS vanilla
  • 1/2 tsp salt
  • 3 C. flour
  • 12oz semi-sweet mini morsels

Instructions

  1. Beat butter with sugar, vanilla and salt.
  2. Beat in flour gradually.
  3. Stir in chocolate chips.
  4. Shape into 1 inch balls and place on ungreased cookie sheet.
  5. Bake at 375 for 10-12 minutes.
  6. Sift powdered sugar over cookies on baking sheet and remove cookies to cool after 10 minutes.

To Freeze.

You can do this two ways:
1) Cook them and place in a freezer ziploc bag. Pull them out and thaw in fridge 1 hour before serving. I’ve found these are great even after being frozen.
2) Make the dough and place in a freezer ziploc bag and label with cooking instructions.

Mint Kiss Cookies.

When we lived in Thailand for 3 years I loved cooking with my Thai friends and this recipe became a favorite. One day Hershey’s will realize that they need to make a package of Kiss candies that don’t have wrappers on as it totally deters me from using them but until that time I figured better to get going on removing wrappers early!!

Ingredients

  • 1 pouch sugar cookie mix 1.5# mix
  • 1/2 C butter
  • 1 egg
  • 1/4 C all-purpose flour
  • 1/4 C cocoa
  • 1.5 tsp mint extract
  • Bag of Hershey kiss candies, unwrapped
  • 3/4 cup powdered sugar

Instructions

  1. Mix the cookie mix, butter, egg, flour and mint extract until a soft dough.
  2. Shape dough into a small circle and then place a Kiss in the middle.
  3. Roll the dough around the Kisses and place on an ungreased cookie sheet.
  4. At this point I flash froze the dough balls and put them in a bag in my freezer.
  5. Ont he day of cooking allow to thaw in your fridge for 2 hours and then place on an ungreased cookie sheet.
  6. Bake at 375 for 8-10 minutes.
  7. Allow to cool for about 5 minutes and then roll in powdered sugar.

To Freeze:

1) Make the cookies and bake them that day and then place the baked cookies in a freezer ziploc bag. Do not roll in powdered sugar. Remove two hours before serving and roll in powdered sugar and serve.
2) I made my balls of dough and placed them on a cookie sheet where I flash-froze them for 1 hour and then place in a labelled ziploc bag and places back in the freezer for the day of cooking.

Candy Cane Cookies

A favorite of mine and my Mother-in-Law’s, these easy sugar cookies look so pretty on a plate.

Ingredients

  • 1/2 C butter. soft
  • 1/2 C shortening
  • 1 C sugar
  • 1/4 C powdered sugar
  • 1/2 C milk
  • 1 egg
  • 1 tsp peppermint extract
  • 3 1/2 C. flour
  • 1/4 tsp salt
  • Red coloring

Instructions

  1. Cream butter, shortening and sugars.
  2. Beat in milk, eggs and extract.
  3. Add flour and salt.
  4. Set aside half of dough and color other half with red.
  5. *NOTE: This would be a perfect time to place these in plastic wrap and in the freezer.
  6. If not freezing place in fridge for 1 hour.
  7. Remove and make into ropes and roll the two colors together to make candy canes.
  8. Cook at 350 on ungreased tray for 13-15 minutes.

To Freeze.
I would not recommend cooking first as these break easily. Instead at the point where you split the dough, cover in plastic wrap and put both in a frezeer ziploc and freeze. Pull out and thaw in fridge for 2 hours before rolling and baking.

Chocolate Sugar Cookie Cutouts.

An easy sugar cookie recipe with a secret ingredient: cocoa. I cut mine out to be little chocolate men and then added a popsicle stick to make cookie pops. My boys were happy!

Chocolate Sugar Cookie Cutouts

A sugar cookie with a twist this easy sugar cookie recipe is great for cutouts and for freezing.

Ingredients

  • 1 C butter, soft
  • 1 C sugar
  • 1/2 C brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 3/4 C flour
  • 1/2 C cocoa
  • 1 tsp baking soda
  • Red Hots

Instructions

  1. Cream butter and sugars until fluffy.
  2. Beat in egg and vanilla,
  3. Combine dry ingredients then add to mix.
  4. Cover and place in fridge for 2 hours.
  5. *NOTE This is a perfect place to stop and place cookie dough in the freezer.
  6. On floured surface roll out dough and cut out with cookie cutter.
  7. Place 2 inches apart on greased baking sheet.
  8. Bake for 8-10 minutes at 375.
  9. Press red hots on before transferring to wire rack.

To Freeze.

Heath Pie

Most of the year my freezer always has a cream pie in it just in case guests show up and the holidays are no different. I love this Heath Pie as not only is it easy but it requires no baking and freezes great.

Heath Pie

10 minutes

Total Time: 10 minutes

Yield: 1 pie

This Heath Pie is a crowd pleaser and is easy to make and easy to freeze.

Ingredients

  • 3 oz cream cheese
  • 2 T sugar
  • 1/2 C half and half
  • 8 oz cool whip
  • 8 oz Heath chips
  • Premade graham cracker crust

Instructions

  1. Beat cream cheese and sugar
  2. Beat in cream
  3. Fold in rest of ingredients.
  4. Freeze for at least 1 hour.
