‘Hillbilly Recipes’: Rancho Beans

A reader sent me a series of what she called ‘Hillbilly Recipes’ that have been in her family for years. As she’s been enjoying my English recipes she wanted us to enjoy some of these so here goes the first: RANCHO BEANS

We often use this dish along with potato salad and ‘5 Cup Salad’ for picnics, and bring potato chips and drinks. I just fill our divided covered dishes here at home, one for each of us, and take them along in the cooler. We also take them out on the boat when fishing and for excursions into the Smoky Mountains, so we have very fond memories connected with this dish! :o)

2 cans pork&beans
1 can kidney beans (drained)
1 pound ground beef
1 cup ketchup
1/2 cup brown sugar
1 cup onion, chopped
2 T mustard ( I use about 1 T.)
1 T vinegar

Directions
Brown ground beef and onion in skillet.
Drain off grease.
Mix together all ingredients, and pour into baking dish.
Bake at 350 degrees for 30 minutes.
Good hot or cold. Ideal for freezing! Can be frozen either before or after baking.
