Why Crock Pot Polenta Casserole?

A few weeks ago I was at Trader Joe’s and spotted some Polenta. Forgive me for being clueless but well….I was clueless so I did what any normal person would do and bought some to try. Then I spotted this a-mazing looking recipe in a book and decided to adapt it to make it into a slow cooker version! As I’m now on a gluten-free, more Mediterranean diet I decided I’d try it out and I LOVED it. Sadly my Hubs did not think the same way (remember that awesome fussy guy I mentioned during my Slow Cooker Indian Curry recipe) Anyway, I’d encourage you to try it and let me know what you think. I ate the leftovers for lunch and will be making it again.

If you’re gluten free serve it with olives and a nice big salad or throw in some bread for your non gluten free family (pictured!) The great thing about it was it only took 2 hours in the crock pot. I liked that because we had soccer from 530-630 and would get in at 645 starving. So I set the crock pot on at 445 and by the time we got home 2 hours later dinner was done!

Polenta is quite bland and tasteless without dressing it up but it’s really good for you. A 120-gram package of Trader Joe’s polenta contains 70 calories, 0 grams of fat, 15 grams of carbs, and 2 grams of protein. Either served hot or cold, for breakfast, lunch or dinner, polenta is a filling treat that is also an excellent grain for people who can’t eat gluten or wheat.

So here’s the recipe for Gluten Free Crock Pot Polenta Casserole.

Ingredients

  • 3 1/2 tsp olive oil
  • 1 medium onion, diced
  • 12oz mushrooms, diced
  • 1 tsp salt
  • 2 cloves of garlic, chopped
  • 1 tsp dried rosemary
  • 1 TBS tomato paste
  • 15oz diced tomatoes, undrained
  • 4 cups of water
  • 1 cup instant polenta
  • 1 cup Parmesan cheese
  • 1/2 cup ricotta

Instructions

  1. Heat 1 tsp olive oil in pand and saute onion until soft.
  2. Add mushrooms, rosemary, tomato paste, salt and garlic.
  3. Reduce heat to medium and cook for 3 minutes.
  4. Stir in tomatoes and cook for another 5 minutes.
  5. Boil the water in a pan and then stir in the polenta. Reduce heat to low and cook for about 5 minutes until thick.
  6. Spray your crock pot.
  7. Spread 1/2 of polenta mix in the bottom
  8. Spread 1/2 the tomato mix on top followed by 2 TBS Parmesan cheese and then half the ricotta.
  9. Repeat the layers ending with Polenta.
  10. Top with 1/4 cup of Parmesan cheese and drizzle with remainder of the olive oil.
  11. Cover and cook on high for 2 hours.
