Frugal Feast: Taco Night Fun

What do you get when you combine some friends, some great tacos and a frugal Mummy? That’s right! A meal fit for a king for 7 people (plus two preggo ladies!) that cost less than 10 bucks!

I was sent the Missions Tacos to trial and asked to create a frugal menu from them. Of course I’m also the queen of improvisation so here’s what I came up with:

Missions Tacos
2# of Ground chuck at $.98# – $1.97
Tomatoes – $.50
Yogurt for sour cream $.50
Nacho chips – $.99
Shredded cheese 8oz for serving and 8oz for chips – $2
Refried beans – $1.98
Taco seasoning – $.39
Final Cost: $8.33+ tacos

Improvising and Stretching The Meat
Whenever I make tacos I love to stretch the meat by adding in either beans or rice. As well as being cheap, it really makes for a healthy meal when you add the beans. You just cook the meat as normal and then add the beans at the end. Seriously, it’s hard to tell the difference even for my fussy hubs.

We don’t eat sour cream apart from on our tacos and I hate to buy a whole container for just a few spoonfuls so a friend suggested plain yogurt. As we always have that handy I decided to try and again….it’s hard to spot the difference.

Nacho cheese is not only expensive but unhealthy and I wasn’t going to make another trip out to the store just for that so I improvised!!! Grated cheese sprinkled over nachos and baked at 200 degrees makes for yummy nachos!

The Verdict
What was interesting is that my friend regularly buys Missions Tacos and uses them which was a good recommendation. We all enjoyed them and agreed that taco night was a fun, healthy and frugal meal.

Taco Night is a fun night especially for kids and Isaac was enjoying gobbling them up. Even our young kids enjoyed how easy they were to hold and chow down on.
