French Toast Cinnamon Roll Ups

We love breakfast foods and I love trying new things but I don’t have lots of time (or energy) to come up with complicated ideas which is why this recipe is perfect.  These are tiny bites of yumminess and are heavy on protein and lower on starch.  {Note I said lower not free of as any breakfast goodie around here contains some form of bread!}


  • Leftover hot dog buns. You could also use wheat bread.
  • 3 eggs.
  • Dash of milk.
  • Tons of ground cinnamon and sugar mix.
  • 2 tbs butter, melted
  • Vanilla – optional

Note: I added wheat germ and blackberries to mine because I had them. You could also add flax seed.


  1. Roll out the bread on a flat surface.
  2. In a bowl add the eggs, milk like you’re making french toast.
  3. In a separate bowl mix the butter and cinnamon.
  4. Lather the bread with the cinnamon butter mixture before dipping it into the egg mix. You want to have a lot of cinnamon on there, especially at one end.
  5. Roll the bread and place each roll in a greased muffin tin. Make sure the heavy cinnamon end is in the middle.
  6. Top with a blackberry and cook at 375 for about 15 minutes.
  7. Serve warm. I opted for no syrup to be healthier 😉
