English Recipe Corner: Sticky Gingerbread

Each week my Mum sends us an English recipe to enjoy.

Makes 1 loaf

1 and a half cups flour
2 teaspoon ground ginger
half teaspoon mixed spice
half a teaspoon baking soda
2 tablespoon black treacle
2 tablespoon golden syrup
half a cup soft dark brown sugar
6 tablespoon butter
1 egg
1 tablespoon milk
1 tablespoon orange juice
2 pieces stem ginger finely chopped
half cup of sultanas
5 ready to eat apricots finely chopped
3 tablespoon icing sugar
2 teaspoon lemon juice


  1. Preheat oven to 325 degrees F
  2. Grease and line a 2lb loaf tin
  3. Sift the flour, spices and baking soda into a bowl
  4. Place the treacle, syrup, sugar and butter in a pan and heat gently until the butter has melted
  5. In a separate small bowl beat the egg, milk and orange juice together
  6. Add the syrup, egg mixture, chopped ginger, sultanas and apricots to the dry ingredients and stir well
  7. Spoon into the prepared tin and level out
  8. Bake in the oven for about 50 minutes until the gingerbread is well risen and a skewer pierced through the middle comes out clean
  9. When cooked remove from the oven and leave to cool in the oven
  10. Mix the icing sugar with the lemon juice in a bowl and beat until smooth
  11. Drizzle the icing back and forth over the top of the gingerbread
  12. leave to set then cut into thick slices to serve
