English Recipe Corner: Somerset Pork With Apples

Each week my Mum (who’s still in England) sends us an English recipe to enjoy. This one sounds yummy especially with all those great apples that are in season!


  • 2 tbspoon butter
  • 1 and a half lbs pork loin cut into bite size chunks
  • 12 baby onions peeled
  • 2 teaspoon grated lemon rind
  • 1 and a half cups apple juice
  • half a cup of stock
  • 2 crisp eating apples cored and sliced
  • 3 tablespoon chopped fresh parsley
  • half a cup of whipping cream
  • salt and pepper


  • Heat butter in large pan and then brown the pork in batches and transfer pork to a bowl
  • Add onions to pan and brown lightly then stir in lemon rind, apple juice, and stock.
  • Boil for about 3 minutes.
  • Return all the pork to the pan and cook gently for about 25 minutes until pork is tender
  • Add apples to pan and cook for a further 3 minutes
  • Using a slotted spoon transfer pork, apples and onions to warm dish and cover to keep warm
  • Stir parsley and cream into pan and allow to bubble to thicken sauce
  • Season then pour over pork and serve hot
