English Recipe Corner: Royalty Cheese Pudding


Each week my Mum (who’s still in England) sends us an English recipe to enjoy. This one is a side dish.

ROYALTY CHEESE PUDDING Serves 4

2 and a half cups milk
1 and a quarter cups fresh breadcrumbs
1 and a half cups strong hard cheese grated
1 and a half teaspoon mustard
4 eggs separated
salt and pepper

Directions

  1. Bring the milk to the boil then stir in the breadcrumbs
  2. Add the grated cheese
  3. Preheat the oven to 350 degrees f and butter a baking dish
  4. Whisk the egg whites in a large bowl until stiff but not dry then carefully fold the egg whites into the breadcrumb mixture using a spatula in 3 batches
  5. Transfer the mixture to the baking dish and bake for 30 to 45 minutes until just lightly set and golden
