English Recipe Corner: Northumberland Pan Hagerty

Each week my Mum (who’s still in England) sends us an English recipe to enjoy. This one is a side dish.

Serves 4 as accompaniment to meat dish

  • 4 tablespoon oil
  • 1 lb firm potatoes thinly sliced
  • 1 large onion
  • 1 cup grated mature hard cheese
  • Salt and pepper


  1. Heat oil in large frying pan
  2. Remove pan from heat and arrange alternate layers of potato, onion and cheese starting and ending with potato and seasoning each layer
  3. Cook for 30 minutes starting over a low heat and then increasing it so that the underside of the dish browns
  4. Preheat the grill
  5. Place the pan under the grill for 10 to 15 minutes to brown the top of the pan hagerty
  6. Slide the pan hagerty onto a warm plate and cut into wedges
  7. Serve with meat
