English Recipe Corner: Cheese Souffle

Here’s the segment where the real Mummy, AKA my Mum (who’s still in England with the rest of my fam) comes up with an authentic English recipe for us MDers to enjoy!

CHEESE SOUFFLE

2 OZ MARGARINE
1 CUP MILK
2 OZ PLAIN FLOUR
HALF TEASPOON SALT
HALF TEASPOON CAYENNE PEPPER
QUARTER TEASPOON DRIED MUSTARD
3 EGGS
4 OZ HARD CHEESE GRATED

  1. Mix flour and marg together and add milk slowly over low heat.
  2. Gradually bring to boil adding the other dry ingredients
  3. Add seasonings and take off heat and cool
  4. Whisk egg yolks and when the sauce is cool add the yolks and whisk altogether
  5. Fold grated cheese into the mix
  6. Beat egg whites until stiff then fold the sauce into the egg whites
  7. Pour mixture into 2 pint dish
  8. Bake in oven at 190 degrees for 40 to 45 minutes till firm and browning on top
  9. This serves 4 to 6 people
