Corn Beef Hash
3lbs potatoes peeled and cut into small pieces-not too small
2 beef stock cubes
1 onion chopped finely
1 can corned beef
chunky bread to serve
- Boil the potatoes and onion in water until tender
- Add corned beef (chopped)
- Stir in stock cubes until nice and thick, simmer for just a few minutes.
- Serve with either dishes of other seasonal veg (delicious with cabbage) and/or chunks of crusty bread-a great winter warmer!!!
