This is a poem that can be heard all over England this time of year as we gear up for tonight and what is commonly known as Bonfire Night or Guy Fawkes Night. The holiday may be over but the recipes from it are so good we’re doing a bunch!!! Today is cookies.

Parkin Pigs

8 oz SR flour
pinch salt
4 oz sugar
4 oz margarine
1 level teaspoon (tsp) ground ginger
1 tsp bicarb soda
2 tablespoons (tbsp) milk
1 tsp golden syrup/molasses
A few currants
Cutters for gingerbread man and parkin pig.


  1. Rub marg, flour and sugar together.
  2. Mix bicarb in a little milk and warm the treacle/molasses.
  3. Add ginger
  4. Mix all to a fairly stuff paste just pliable enough to roll out
  5. Roll thinly and cut into shapes, place currants onto shapes for eyes
  6. Bake approx 15 mins (180 degC)
