Yorkshire Hotpot

2lb neck of mutton
Beef broth or water
2lb potatoes, sliced
10z butter
2lb onions, sliced
salt and pepper

Layer the meat with the potatoes and onions in a tall cooking pot. Add about 1 pint stock or water and put the butter on top. Season. Cover tightly and cook in a slow oven for 3 to 4 hours. Remove the lid for the last 30 minutes to let the potatoes turn brown.
