BARNSLEY CHOPS WITH HOMEMADE MINT SAUCE – Gordon Ramsey
Barnsley chops are the large double chops from the saddle of the lamb. They cook so well on the barbecue because the fat goes all crispy and prevents the meat from drying out.
4 large Barnsley lamb chops
4 sprigs fresh rosemary
Freshly ground salt and pepper
2 handfuls fresh mint leaves
1 tsp sugar
75ml malt vinegar
- Pierce the flesh of each chop with the rosemary, season well and cook them on the barbecue for 10-20 minutes, depending on how rare you like them.
- Roughly chop the mint, mix with the sugar and vinegar, and spoon over the cooked lamb.
- Serve with a jacket potato or honey-glazed pumpkin wedges.
