English Recipe Corner

This week we have a guest post in the English Recipe Corner. This is someone I found while blogging and I asked her to contribute this week as my Mum is still living out of suitcases and can’t find her recipe books (my parents sold their house but haven’t found one to move into yet! Long story – I’ll tell it if you like!!)

So, Beeb, who is originally from London and now blogs at Super Coupon Girl came to my rescue! Her blog is awesome but for those of us who live in a place where they don’t double-coupon it can be depressing as to how much she can save! This month her grocery shopping budget is $20!!!!!!!!!!!!!!!!

As for the recipe, it’s for cheese and onion pie and was taken from www.britainexpress.com

Cheese and Onion Pie

600 grams cheddar cheese (medium or old), shredded
4 medium to large onion, chopped
pastry for upper and lower crusts

Boil onions in a little water. When transparent, drain, reserving the liquid. Mix shredded cheese into HOT onions. If mixture seems a little dry, add a LITTLE of the reserved stock (the remainder can be frozen for soup stock).

Pour mixture into unbaked pie shell and cover with pastry top. Bake at 350 F until shell is golden brown. Serve hot or cold. Excellent with a salad and Branson pickle.

Note: If you have too much mixture for your pie shell, mix a bit of dry mustard in it and spread over toast for a “mock” Welsh Rarebit.

    The challenge I encounter in making British dishes in the states is that you can’t get half the ingredients here – like proper sausages or beans.
