Easy Ice Cream Cake Dessert

With the weather getting {a little} warmer here in Chicagoland I was thinking Spring last week and needed a fun dessert for when we had friends over. But, I didn’t want to run to the store and I wanted something my 4 year old could help me make: Enter the Easy Ice Cream Cake Dessert.


  • Cookies, around 15
  • Chocolate syrup/sauce
  • 1 tub of ice cream. I used vanilla as it was all I had but I think it would taste wwwwwwwwwwway better with say mint chocolate.


  1. First melt the ice cream slightly in the microwave. You don’t want it runny but need it soft.
  2. I had some leftover chocolate chip and sugar cookies that I used but you could make some for the occasion if you didn’t have any laying around! Smash them up good {Yes we used the Bob the Builder hammer and it worked great!}
  3. Drizzle with chocolate sauce and mix. Press into a 9×13.
  4. Add the ice cream on top and some sprinkles to decorate.
  5. Place in the freezer for at least an hour before serving then you can cut with a knife and wow your guests.
