A few weeks ago I was teaching a class at Crestwood Library called Slow Cooker Suppers and a lady there mentioned her facorite slow cooker recipe was Crock Pot Ribs and Potatoes. she told me how easy it was to make and I was intrigued. I never make ribs as they’re too time consuming but crock-potable (yes it’s a word!!)? Sign me up! So this week it got hot around here and there are days when I want to be lazy and just add things to the crock pot so I don’t turn the oven on.

Well we tried the ribs and Hubs gave them a huge thumbs up! Hoorah! A Manly Crock Pot Meal! It’s super simple:

Ingredients for Crock Pot Ribs and Potatoes – Serves 6

  • Baby back ribs. I used pork
  • About 4 potatoes, cut into chunks
  • 1/2 bottle of your favorite BBQ sauce
  • Foil
  1. I used my bigger crock pot for this and put some foil on the bottom crumpled up to try and get the ribs not to cook in their fat. If you had a rack for in there that would work best.
  2. Cut up the ribs into pieces of about 4 or so that will fit and place on the foil.
  3. Add the potatoes.
  4. Pour over the BBQ sauce.
  5. Set on low for about 8 hours. You could do high but this is one you want to slow cook!

The ribs are fall off the bone (which is our fave!) and the potatoes taste all smoky!

  1. I keep expecting to find a rack for the crock pot advertised someday! I have learned to take the meat out of the crockpot and bake in the oven for a few minutes which helps when it has cooked in it’s own fat. Your recipe sounds delicious. Thanks for sharing at Merry Monday.
