Crock Pot Paleo Chicken Breast

My friend Wendy recently told me she’s made this amazing Crock pot Paleo Chicken Breast recipe and I was intrigued. She said it called for the Paleo Mayonnaise recipe that is super easy and I love to dip sweet potato fries in. It sounds crazy but you slather it on the chicken breasts and cook in the crock pot. She’s a very busy girl with 4 kids and doesn’t have tons of time to cook, especially if the meal will flop so I knew I could trust her! Then she sent me pictures and told me I could use it for Slow Cooker Mondays!! Isn’t that a great friend? So here’s Wendy’s recipe for Crock Pot Paleo Chicken Breast that will have you smacking your lips and wanting more!

The recipe calls for a package of Italian mix but if you’re reading labels the average Italian seasoning mix is not a great idea. The best way to do it is make a batch of your own quick. Wendy uses my recipe Homemade Italian Seasoning Recipe and swears by it as not only is it cheaper but homemade just tastes better!

Crock Pot Paleo Chicken Breast


  • 1/4 TBS butter
  • 2 cups of Paleo mayonnaise (see recipe below)
  • 6 boneless skinless chicken breast pieces cut into bite sized pieces
  • 1 TBS Italian Seasoning
  • For Mayonnaise
  • 1 egg
  • 1 TBS lemon juice
  • 1 tsp ground mustard seed
  • 3/4 cup olive oil


  1. Set slow cooker to high and melt the butter in the bottom
  2. Mix mayonnaise with the dressing mix in a bowl and then stir in the chicken to coat
  3. Pour the mixture into the slow cooker and put the lid on.
  4. Cook for 4-5 hours, stirring occasionally.
