Why Crock Pot Clean Chicken and Broccoli?

I’m not usually the kind of friend who shows up at your house with a crockpot in her arms but last night my friend Lynda was blessed with me showing up with this Crock Pot Clean Chicken and Broccoli. Of course that made her a guinea pig but strangely she went along with it (hello, I made her dinner!) and while our Hubbies were both at work her and I tried out my newest Clean Crock Pot recipe and she was impressed. In fact she told me to blog it quick so she could have the recipe. I’m nothing if not obedient so here you go Lynda: this one is for you for being such an awesome friend and support!

Clean Chicken and Broccoli Ingredients

This feeds 4

  • 1/2 cup of coconut milk
  • 1/2 cup of water
  • 4 chicken leg quarters – remove the skins
  • 1/4 cup of honey
  • 1/4 cup of dark organic sugar (or just use another 1/4 cup of honey)
  • 2 TBS soy sauce
  • 1/8 tsp ground cloves
  • 2 minced garlic cloves
  • 1 head of broccoli

Clean Chicken and Broccoli Ingredients

  1. Wash the chicken and broccoli
  2. Add the liquids into your crock pot and stir to combine.
  3. Place the chicken in the base.
  4. Mix the other ingredients (except the broccoli) in a bowl and then pour over the chicken.
  5. Cut the broccoli into small pieces and put over the top of the chicken.
  6. Cook on low for 6 hours or high for about 3.
  7. Serve over brown rice, quinoa, or couscous.
