My good friend, Kath, sent me this awesome recipe!
Chicken Salsa Surprise
3 Skinless, boneless chicken breasts
1 24 oz jar of peach salsa (or any sweet salsa)
1 can of corn
1 can of black beans
Semi drain the corn and beans and throw all the ingredients in the crock-pot with some salt and pepper and leave it to cook for 7 – 8 hours.
30 min before you take it out, shred the chicken breast and let it sit for the last 30 min. All the excess juices will be absorbed.
Serve as your wish:
* As a taco/tortilla filling and you add other stuff as your like (great with guac)
* On top of chips
* On bread making a great sandwich …. it is versatile!!!
