Comfort Food: Country Chicken Soup

It’s that time of year to grab a blanket and a movie and snuggle on the couch. What better way than with some good ole comfort food: soup. I thought I’d share some reader’s fave recipes over the next few days. If you’ve got a recipe you love, leave a comment!

Ingredients

  • 1 (3-4 lb.) chicken
  • 4 qt. water
  • 1/2 onion
  • chopped fine
  • 3 stalks celery
  • 5 lg. carrots
  • 1/3 c. rice
  • 1 stick butter
  • 1 stick margarine
  • 1 1/2 c. flour
  • 1 pt. half & half
  • 3-4 c. diced cooked chicken
  • 2 tsp poultry magic ( or any poultry seasoning)
  • 3 chicken bouillon cubes
  • 1 tsp. salt
  • 1/2 tsp. pepper.

Directions

  1. Cook chicken, bouillon, with water until tender.
  2. Cool chicken and chop meat.
  3. Strain stock, set aside.
  4. In saucepan combine onion, celery, carrots, rice, 1 qt. stock. cook 20 min. set aside.
  5. In lg. stock pot melt butter, blend in flour, heat until thick and bubbly.
  6. Add 2 qts. stock, stir until bubbly.
  7. Add vegetables (undrained), chicken, seasonings.
  8. Stir in half & half.
  9. Heat slowly to serving temperature.

Yields 4-4 1/2 qts and freezes well. A lot of work, but oh soooo yummy!
