Why Frappuccino Cupcakes

Every year Starbucks does a happy hour on Frappuccinos and for Starbucks Happy Hour 2013 you can get half price Frappuccinos between May 3-12 2013. To celebrate I decided to make some cupcakes! These Frappuccino Cupcakes use a coffee cupcake recipe with a new vanilla frosting I tried and they were delish. You need to get some Starbucks via for the cupcake itself or another strong coffee and it just adds a wonderful coffee flavor to the cake.

Befriend your Barista and ask for a few straws to add decoration. I cut mine into 3 and added them to the tops of each cupcake before serving.

Caramel Frappuccino Cupcakes

These Frappuccino Cupcakes use a coffee cupcake recipe with a new vanilla frosting I tried and they were delish

Ingredients

    For the Cupcake
  • 2 cups flour
  • tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup boiling water
  • 1 packet VIA or 2 TBS espresso coffee
  • 1/4 cup milk
  • 1 stick of butter
  • 1 cup of brown sugar
  • 2 eggs
  • For the Frosting:
  • 2 sticks butter
  • 1# powdered sugar
  • 2 oz cream cheese
  • 1/4 cup of sweetened condensed milk
  • 1 TBS vanilla
  • 2 TBS milk

Instructions

  1. In a bowl combine the flour, baking powder and baking soda.
  2. In another bowl add the boiling water to the coffee and stir well. Add the milk and place in the fridge to cool for a few minutes.
  3. In the meantime beat the butter, sugar and eggs.
  4. Gradually add in the cooled coffee and flour mix.
  5. Fill cupcake liners 2/3 of way with the mix and bake at 350 degrees for 20-25 minutes. Test with a toothpick and if it comes out clean they're done.
  6. While baking:
  7. Make the frosting by Mixing together the butter, sugar, cream cheese, 2 milks and vanilla.
  8. Gradually add in the powdered sugar.
  9. Place in the fridge to harden a little for about 15 minutes.
  10. Once cooked:
  11. Frost the cupcakes and top with caramel drizzle and a green straw,
