Bargain Meal of the Week – Meijer

Thanks to my friend, Stacie at Kat’s Kitchen, for her help again with our bargain meal. The aim is to pick something on sale at one of the local stores and cook a meal for around $5 for 4. This week Stacie picked Meijer:

Here’s a fairly simple meal that my husband and I really enjoy. If you already have boneless chicken breasts in your freezer, you could always use those and cut them into three lengthwise pieces to make tenders, otherwise pick the 64 oz package up at Meijer for $7.99 this week and you’ll be able to make a few chicken finger dinners in the next month.

Chicken Fingers with Potato Wedges and Strawberries — TOTAL $5.25
From Meijer:
-Chicken Breast Tenders (64 oz/$7.99) – 1.5 lbs. $3
-3 Baked Potatoes (10 lbs/$5) – $.75
-1 lb Strawberries (3lbs/$5) OR 1/2 Pineapple ($2.99) – $1.50
From your Pantry:
-Canola or Olive oil
-Italian seasonings/lawyers seasonings salt
-Bread crumbs/crushed corn flakes/cracker crumbs or anything similar that you find in your pantry to coat the chicken
-Grated Parmesan cheese
Garlic salt or salt
-Paprika (or Chili Powder)
-Non-stick cooking spray
Potato Wedges
Cut potatoes into wedges (cut in half and each half into four pieces), toss with small amount of oil & lawyers seasoning salt and Italian seasonings (or seasonings of your choice). Bake in a 450 degree oven for 20-30 minutes until tender and slightly crisp
Chicken Fingers
Chicken Breast Tenders
3/4 cup bread crumbs/crushed corn flakes, etc.
1/4 cup grated Parmesan cheese
1/2 teaspoon salt or Garlic salt
1/2 teaspoon paprika
1 egg
Non-stick cooking spray

  • Heat oven to 450ºF. Line cookie sheet with foil; spray with cooking spray.
  • Mix crumbs, cheese, salt and paprika in resealable plastic food-storage bag (or large bowl).
  • Dip the chicken strips into the slightly beaten egg; place in bag/bowl of crumbs and shake to coat. Place chicken on cookie sheet. Spray chicken with non-stick cooking spray.
  • Bake 12 to 14 minutes, turning after 6 minutes, until no longer pink in center.
  • Serving suggestions: Ranch dipping sauce, BBQ Sauce, Honey.
