Bargain Meal of the Week – Meijer

I’ve got a freezer full of cheese (7/$1 at Jewel a while back – shreds freeze great!), some free salsa from a while back so this recipe Stacie found sounds perfect to use up some of that and serve a healthy and cheap meal.

Crock Pot Chicken Tacos – TOTAL $5.13

2 lbs Meijer Boneless Skinless Chicken Breast – $3.50
Rotel Diced Tomatoes & Green Chilies – $.80
½ bag Dole Lettuce – $.83
Taco Shells (I didn’t see these in the sale ad so hopefully you have some handy in your pantry/freezer, I usually do!)

Sour Cream
Shredded Cheese

Plug in the crock pot.
Place the chicken breast and can of diced tomatoes in.
Cook on low for 8-10 hours.
Shred chicken with two forks 6-8 hours into it and continue to keep warm.
Serve on taco shells with lettuce and other optional items.

  1. I make something like this, but I use chicken breast with any salsa. Put in crock pot on high for 4 hrs, the rest is the same, but we use tostads shells. It is so easy that when people ask for the recipe, I just have to laugh before I tell them. Yummy!
