Bargain Meal of the Week – Meijer

Thanks to our resident chef Stacie for this recipe. Check out her blog here for some great baking recipes. If you like this weekly feature please stop by her blog and say hi to her to keep this feature going! Thanks!

I’ve got a freezer full of cheese (7/$1 at Jewel a while back – shreds freeze great!), some free salsa from a while back so this recipe Stacie found sounds perfect to use up some of that and serve a healthy and cheap meal.

Crock Pot Chicken Tacos – TOTAL $5.13

2 lbs Meijer Boneless Skinless Chicken Breast – $3.50
Rotel Diced Tomatoes & Green Chilies – $.80
½ bag Dole Lettuce – $.83
Taco Shells (I didn’t see these in the sale ad so hopefully you have some handy in your pantry/freezer, I usually do!)

Optional:
Sour Cream
Shredded Cheese

Plug in the crock pot.
Place the chicken breast and can of diced tomatoes in.
Cook on low for 8-10 hours.
Shred chicken with two forks 6-8 hours into it and continue to keep warm.
Serve on taco shells with lettuce and other optional items.

Each week we feature a meal for around $5 for 4 people which is comprised of buying ingredients from one store. Thanks to our resident chef, Stacie! For more such recipes, visit $5 Dollar Dinners.

  1. I make something like this, but I use chicken breast with any salsa. Put in crock pot on high for 4 hrs, the rest is the same, but we use tostads shells. It is so easy that when people ask for the recipe, I just have to laugh before I tell them. Yummy!
