Serving BLTs for supper is a great meal idea for the summer. Cooking the bacon is the most time consuming part, but can be done ahead of time (idea: serve the other ½ pkg for breakfast earlier in the week) and reheated in the microwave. Meijer has their Home Grown Vine Ripe Tomatoes for $1.28 a pound, but, if you’re like me and planted some tomato plants, hopefully one is ripe about the time you want to make these BLTs.
½ pkg Thorn Apple Valley Bacon – $1.25
8 slices Meijer Wheat Bread – $.49
1 lb Home Grown Vine Ripe Tomato – $1.28
½ head lettuce – $.60
½ Cantaloupe – $.75
Cook bacon, slice tomatoes, wash and cut up lettuce.
Toast bread and top with lettuce, tomato and bacon. Serve with cut up cantaloupe on the side.
Other sandwich ingredients: Mayo, cheese, avocado/guacamole if your budget allows 🙂
