If you’re a bacon lover then these Bacon and Egg Cups will really pack a big punch! They’re a great source of protein and something a little different on a plate. My Hubby called them “fun Food” When I served them!

Ingredients
  • Rashers of bacon (thin slices of bacon)
  • Eggs
  • Optional – slices of tomato or onions
Instructions
  1. Spray the bottom of muffin tins with non-stick spray.
  2. Cut the bacon slices in half and tuck one around the inside of the muffin cup. I found that by tearing the bacon width-wise it fit better.
  3. Break an egg into each muffin tin.
  4. Cook in the oven at 350 for 15-20 minutes.
  5. If you want to use veggies (I did for mine) add the slices of onions or tomatoes at the bottom of the tins. Then it’s almost like a frittata.

  1. Can I pre cook the bacon halfway? Also are these freezer friendly? Thanks!

    • I haven’t frozen them Melanie (my boys ate them all!) but I bet you co0uld. If you try please let us know! As far as pre cooking the bacon, I’m not sure I understand? It wouldn’t wrap around then.

  2. Clair do they come out of the pan easily. We are having a brunch the day after my daughters wedding and these looked a good way to cook the eggs but I don’t want anything that could end up as mush 🙂

    • Lol, no mush! I sprayed the pan down good and they were great. Looked like I pictured on the plate (I know it’s a bit fuzzy!) Congrats on the wedding!
