Why Cherry Coke Cupcakes?

So when I tried out all the Soda Pop Cupcakes on friends these were certainly one of the popular ones and today is – Cherry Coke Cupcake Recipe. Again a box mix, again a can of coca cola but this time cherry coke and dark chocolate cake mix combined to make a yummy cupcake you can almost drink!

Cherry Coke Cupcake Recipe

Ingredients

    CAKE
  • Dark chocolate cake mix
  • 12oz cherry coke
  • ICING
  • 1# powdered sugar
  • 1/4 cup of butter
  • 3/4 cup of shortening
  • 1 TBS cocoa
  • 2 TBS of cherry coca cola (add more if needed)
  • Maraschino cherries

Instructions

  1. Mix the cake mix with the can of coca cola. Do not add eggs or oil.
  2. In the bottom of each cupcake cup, add one maraschino cherry.
  3. Pour the cake mix into each cup, about 2/3 full.
  4. Bake as per box mix instructions.
  5. Once the cupcakes are done, allow to cool and mix your icing.
  6. Frost the cupcakes and then add a maraschino cherry as decoration.

These cherry coke cupcakes were so moist and just decadent. Sorry about the photos I was having a blast! The hat was just $1 at the dollar store and I think really makes them cute ;)

Red Velvet Dr Pepper Cupcakes Recipe Review

Continuing on with my Soda Pop Cupcakes series I present Red Velvet and Dr. Pepper – my fave pop in a cupcake! The Dr. Pepper in the icing adds a light brown tint to the icing so it looks great with chocolate candies. I used the miniature Hershey chocolates and it gave a little more variety as some had krackle’s, mr. goodbars, etc… on them. Anything chocolate would be delicious though.

Red Velvet Dr. Pepper Soda Cupcakes

Ingredients

  • Cake
  • 1 Red Velvet Cake Mix
  • 1 12 oz. can of Dr. Pepper
  • Icing
  • 1 1/3 cups shortening
  • 1/3 - 1/2 cup Dr. Pepper
  • 3 tablespoons Dream Whip
  • 2 lbs powdered sugar
  • 2 tablespoons Dr. Pepper flavoring (optional but really helps pump up the flavor)

Instructions

  1. Mix cake ingredients together and bake in cupcake pan according to box directions.
  2. While your cupcakes are baking/cooling mix icing ingredients together. I love this icing because it's not to sweet. The longer you mix it the smoother it gets. One of the few recipes I break out the kitchen aid for as I like to mix it for 15 minutes. However a quick mix will suffice.
  3. Ice the tops of the cupcakes and top the cupcake off with half a miniature chocolate.
  4. Perfection :)

I do believe I saved the best cupcake for last when I made this Root Beer Float Cupcake Recipe. I mean, seriously, how cute do these Root Beer Float Cupcakes look? Plus the recipe is a box mix and therefore super simple. Ya ready?!

Just a note: I tried hard to make these taste really like root beer but to no avail! I found the best way to do it was make the icing strong and add that. These are fun looking cupcakes as the root beer makes them puff up big.

Ingredients

  • White cake mix
  • 12oz root beer
  • 1# powdered sugar
  • 1/4 cup of butter
  • 3/4 cup of shortening
  • 1 TBS cocoa
  • 2 TBS of root beer (add more if needed)
  • Root beer barrel candies
  • Straws.

Instructions

  1. Mix the root beer with the cake mix and mix well.
  2. Bake as per instructions on mix cake box.
  3. After the cupcakes have cooked and cooled, whip up the frosting and frost using a ziploc bag with the corner cut out.
  4. Top with a root beer candy.
  5. Snip the straws in half and add to the cupcakes.

Why Orange Dreamsicle Cupcakes?

This Orange Dreamsicle Cupcake recipe came up because so many people love the taste of dreamsicles so we figured we’d try making cupcakes to fit in with the Soda Pop Cupcakes series.

Soda pop cupcakes are a huge hit right now and why wouldn’t they be? They are adorable and EASY! Most require just two or three ingredients. These orange dreamsicle cupcakes are delicious and I can’t get over the wonderful light color of them.

Orange Dreamsicle Soda Pop Cupcakes

Ingredients

  • Cake Ingredients
  • 1 white cake mix
  • 12 oz of orange soda pop
  • 1 1/2 - 2 teaspoons vanilla
  • Icing
  • 1 1/3 cups shortening
  • 1/3 - 1/2 cup orange soda
  • 3 tablespoons Dream Whip
  • 2 lbs powdered sugar
  • 2-3 teaspoons vanilla (clear if possible)

Instructions

  1. Mix cake ingredients together and bake in cupcake pan according to box directions.

I love using a cake mix to make amazing cupcakes and this coca cola cupcake recipe was the first I thought of when creating my 7 Soda Pop Cupcakes! I don’t have a ton of time to make a cake from scratch and honestly, I think a mix cake does the job just fine which is why I devote more time to icing them! Without further ado here’s a cupcake made from coca cola.

Cupcakes: Coca Cola Cupcakes

Ingredients

    Cupcake Recipe
  • Chocolate cake mix
  • 12oz can of coca cola
  • Icing
  • 1# powdered sugar
  • 1/4 cup of butter
  • 3/4 cup of shortening
  • 1 TBS cocoa
  • 2 TBS of coca cola (add more if needed)
  • Coca cola bottle candy

Instructions

  1. Take the cake mix and add the can of coca cola. You DO NOT need to add eggs, oil or water like you would in a normal cake mix.
  2. Cook as per directions on the box mix.
  3. Let the cupcakes cool and then frost.
  4. For the icing simply mix the butter, shortening and sugar together.
  5. Add the cocoa and taste test!
  6. Pipe the icing on. I just used a ziploc bag that I cut in the corner and added a tip in the bottom.
  7. Add a coca cola bottle on top for decoration.

Why a Homemade Vegetable Dip Recipe?

Have you seen all the ingredients in those nice convenient dips at the store? There’s so many that I haven’t bought one for years but when i made this with Italian seasoning my family really enjoyed it and it goes in our unprocessed new lifestyle.

After I made Homemade Chili Seasoning and Homemade Taco Seasoning I was hooked on how easy it was to make my own! One thing I love using is Italian herbs and spices so I made Homemade Italian Seasoning and then I tried it out as a vegetable dip and boy was it yummy!

Homemade Italian Dip

Ingredients

    For the Italian powder:
  • 3 TBS garlic powder
  • 2 TBS onion powder
  • 4 tsp oregano
  • 1/2 tsp thyme
  • 2 TBS parsley
  • 4 tsp salt
  • 2 tsp pepper
  • To Make Dip
  • 8oz sour cream

Instructions

  1. Grind all together in a mini chopper or food processor.
  2. Store in an airtight container with your spices.
  3. Add 2 TBS of above Italian seasoning to 8oz sour cream
  4. Stir together and serve with veggies

Crock pot Chicken Curry

Tim really loves a good Indian Curry so when I saw this Crock Pot Chicken Curry recipe I thought I could change it up a bit and customize it for us. Neither of us are big sweet potato fans but I felt like the curry powder disguised the taste well whereas Tim would definitely have preferred regular potatoes so feel free to change yours up too!

You can add peanuts, raisins or even coconut to this and I added some shredded coconut which was delish. In future I’ll probably add 1 or 2 chopped carrots too. Before you start you may want to use this unprocessed Chicken Bouillon Recipe I have to make it better for you.

Serve it with rice and you’ve got a great curry for a weeknight!

Crock Pot Chicken Curry

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 onion, chopped
  • 2 sweet potatoes, in cubes
  • 1 cup of water
  • 1 garlic clove minced
  • 1 tsp chicken bouillon powder
  • 4 tsp curry powder
  • 2 TBS whole wheat flour or cornstarch

Instructions

  1. Place the potatoes and onion in the bottom of the slow cooker.
  2. Add the chicken on top.
  3. Combine the water, garlic, chicken bouillon and curry powder and pour over the top.
  4. Cook on low for 5-6 hours.
  5. Remove the chicken and vegetables and keep warm.
  6. Mix the flour or cornstarch into the sauce in the pot and cook for a further 15 minutes.
  7. Prepare your rice while waiting.
  8. Remove sauce and add to top of curry before serving.

It’s grilling season and while Hubs is firing up the grill outside I like to prepare Grilling Side Dishes. Most of mine aren’t for the grill as Tim likes to have “room for meat” as he calls it but there’s a few side dishes that seem to go well with our grilled meat and are good to eat outdoors. 2 TBS dressing
1/4 cup of balsamic vinegar
1/2 cup of oil
2 TBS water

Add to a container and shake.

8oz sour cream

Stir together and serve with veggies

Freezer Crock Pot Pineapple Teriyaki Chicken

If you’re looking for a freezer crock pot recipe then this freezer Crock Pot Pineapple Teriyaki Chicken is a favorite of my friend Holly. The great thing is you can freeze all the ingredients together in a freezer ziploc and just remove when you need it. This would also make a great new Mom meal/gift for her freezer.

What i love about freezer meals like this is that as they defrost they marinate creating a great flavor ready to be dumped in the crock pot.

Freezer Crock Pot Pineapple Teriyaki Chicken

Ingredients

  • 4-6 boneless, skinless chicken breasts - whole or cubes
  • 1 whole pineapple or a can of pineapple slices
  • 1/3 cup soy sauce
  • 1/2 cup brow sugar

Instructions

  1. Place all the ingredients in a freezer ziploc bag and label. I also added cook time of 6-8 hours on low.
  2. Freeze.
  3. The day you need it pull it out and let defrost. If I was making for dinner I'd pull out early in the morning so i could start cooking around noon.
  4. Cook in your crock pot on low for 6-8 hours.
  5. Serve over rice with broccoli.
