3 English Recipes With Apples

It’s Fall which means pumpkins, sweaters and all things apple. Oh wait a moment we’re having an apple shortage?! Yup here in the Midwest we had a bad summer and that means apples won’t be as cheap but they’re still plentiful and still make me think of fall which is why I figured apple recipes were in order. But instead of the normal crop I decided 3 English Recipes based around apples would be kind of fun! So without further ado here are 3 recipes from my Mum’s cookbook.

Dorset Apple Cake

Dorset Apple Cake

Ingredients

  • 8 ozs cooking apples peeled cored and chopped
  • Juice of half a lemon
  • 2 cups flour
  • 1 and a half teaspoon baking powder
  • Half a cup diced butter
  • 1 cup soft light brown sugar
  • 1 egg beaten
  • 3 tablespoon milk
  • Half teaspoon ground cinnamon

Instructions

  1. Pre heat oven to 350 F
  2. Grease and line a 7 inch round cake tin
  3. Toss apple with lemon juice and set aside
  4. Sift flour and baking powder and rub in butter until mixture resembles breadcrumbs
  5. Stir in half cup of sugar, the apple and the egg and mix well adding enough milk to make soft dropping consistency
  6. Transfer dough to greased tin
  7. In a bowl mix together remaining sugar and cinnamon and sprinkle over cake mixture
  8. Bake for 45 to 50 minutes until golden
  9. Leave to cool in tin for 10 minutes then transfer to cooling tray

Somerset Pork With Apples

Somerset Pork with Apples

Ingredients

  • 2 tbspoon butter
  • 1 and a half lbs pork loin cut into bite size chunks
  • 12 baby onions peeled
  • 2 teaspoon grated lemon rind
  • 1 and a half cups apple juice
  • half a cup of stock
  • 2 crisp eating apples cored and sliced
  • 3 tablespoon chopped fresh parsley
  • half a cup of whipping cream
  • salt and pepper

Instructions

  1. Heat butter in large pan and then brown the pork in batches and transfer pork to a bowl
  2. Add onions to pan and brown lightly then stir in lemon rind, apple juice, and stock.
  3. Boil for about 3 minutes.
  4. Return all the pork to the pan and cook gently for about 25 minutes until pork is tender
  5. Add apples to pan and cook for a further 3 minutes
  6. Using a slotted spoon transfer pork, apples and onions to warm dish and cover to keep warm
  7. Stir parsley and cream into pan and allow to bubble to thicken sauce
  8. Season then pour over pork and serve hot

Apple Souffle Omelette

Apple Souffle Omelette

Ingredients

  • 4 eggs (separated)
  • 2 tblspoon light cream
  • 1 tablespoon sugar
  • 1 tablespoon butter
  • Powdered sugar for dredging on top
  • Filling
  • 1 eating apple
  • 2 tablespoon butter
  • 2 tablespoon soft brown sugar
  • 3 tablespoon light cream

Instructions

  1. Peel, core and slice apple. Saute in butter and sugar until just tender
  2. Stir in cream and keep warm while making omelette
  3. Place egg yolks in bowl with cream and sugar and beat well.
  4. Whisk egg whites until stiff then fold into yolk mixture
  5. Melt butter in large frying pan pour in souffle mixture and spread evenly
  6. Cook for 1 minute until golden underneath then place under hot grill to brown the top.
  7. Slide omelette onto plate add the apple mixture then fold over
  8. Sift the icing sugar over thickly then mark with pattern on top with a hot metal skewer .
  9. Serve immediately
